Gazpacho Salad

  • 6 Roma or plum tomatoes, chopped
  • 1 onion, chopped
  • 2 cucumbers, peeled, seeded and chopped
  • 1/2 cup black olives, sliced
  • 1 green pepper, chopped
  • 3 - 4 stalks celery, chopped
  • 2 garlic cloves, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. fresh parsley, chopped
  • 1 Tbsp. fresh basil, chopped
  • 1 tsp. hot sauce
  • Salt and pepper to taste
In a large bowl, combine tomatoes, onion, cucumber, black olives green pepper and celery and toss. Combine garlic, vinegar, olive oil, parsley, basil, hot sauce and salt and pepper in a cruet and shake well. Just before serving, pour olive oil mixture over tomato mixture and toss.

Eggplant Parmesan

  • 3 - 4 large eggplants sliced into 1-inch pieces
  • 1 cup flour
  • 4 eggs, beaten
  • 1 and 1/2 cup seasoned breadcrumbs
  • 1/2 cup fresh parsley, minced
  • 1 tsp. ground oregano
  • 1 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 1 32-oz jar spaghetti sauce
  • 2 cups mozzarella cheese, shredded
  • 8 oz. pasta noodles cooked to make about 4 cups
Dredge eggplant slices through flour and then beaten eggs. Combine breadcrumbs, parsley, oregano, Parmesan cheese and salt and pepper. Dredge eggplant through breadcrumb mixture. Spray a large shallow baking dish with non-stick cooking spray. Place eggplant slices in baking dish. Bake for 30 minutes at 350 degrees. Remove from oven and pour spaghetti sauce over eggplant and sprinkle with mozzarella cheese. Bake an additional 10 - 15 minutes at 350 degrees. Serve over hot pasta.

Messages from Members

  • I want to thank everyone for their prayers for Haley. Haley is okay for now. Her heart is growing faster than the hole in the artery ..... (I am sure there are those of you that know all about this) ....... Everyone has 3 things called Leaflets in the main artery coming from the heart. When you are born they are stuck together closing that artery. The first breath you take pops open the leaflets that open it for blood and then through the lung into oxygen. Well only one of her leaflets ever opened so her heart is going to need more blood flow for it to do the filtering it has to. Her murmur is louder and the hole is not opening right. She went from severly mild .... to mild .... which is a problem but not surgery yet. He wants to wait one more year. Every year she can wait is the better it will likely go. He said inside her artery going through the heart is great and healthy so when they do have to do it she will be fine and healthy. The blue around the mouth is because her skin is so fair and her veins close to the top. He said her oxygen is 98%. Very good. So for now she is fine. "PRAISE GOD!" So is Grandma!!! God Bless All

  • I was in Florida during the hurricanes so I know how it is to be with out food , water and so forth, God only knows how these poor people will make it through, so please pray for all of them. Bea

  • To let you know we arrived home safely from CO .... we left the Navajo reservation we slept in this morning at 10 .... sure did not miss this terrible heat we are having after being in the coolness of CO ... hope all is well ... will write more tomorrow ... take care

    Good Morning! I hope this finds you well ... well here we are back from a wonderful, colorful 2 weeks all over the state of CO ... some of Utah and of course AZ .... our first night was spent in Chinle, Az .... which is a Navajo reservation ... now that was an experience .... animals all over the place .... dogs running around looking for hand outs ( food) ... cows and horses in the streets oh and sheep too ... they live very poorly and each of the property had a Hogan built on it ... ( old Indian homes, round in design) ... very friendly people .... our first full day we went to see the ruins that date back hundreds of yrs .... homes ( dwellings made in a canyon in the mountains) ... Canyon DE Chellye .. ( spelling ... it's pronounced DE Chey) .. we saw so very much .... went into Gunnison, Silverton, Denver, Durango, CO Springs, Vail, Grand Junction to name some ... we saw the Rocky Mountains, Pikes Peak ... ( up there over 14000 elevation) ... Black Canyon .... there was beauty all around us everyday .. we stayed on another reservation our last night and had a long ride home ... Larry, took pictures ( of course) and once they are edited I will share them with you ... it is good to be home but not in this terrible heat ... weather in CO was terrific ... cool and some rain but none that lasted for very long ... Larry, had to return back to work today ... it was "great" having him around 24/7 for the 2 weeks ..... boo hoo, it went too fast ...... we also celebrated our 8th wedding anniversary ... wow, speaking of going fast .. boo hoo, it went too fast ... take care Love Arlene who wishes everyone a safe and happy Labour Day.

  • Test on my thyroid is ok have to have another nuclear stress test by the end of the yr. This just has been a bad year for us. Been that way since Hurricane Frances hit us last yr. about this time of the yr. Charlie doing ok also back to work. Of coarse it's not work just has to be there, It's really slow there and he likes it that way. All for now LOL Florida Marie

  • They just found out other day that my Grandson, David age 10, is going to have hernia surgery. My daughter, was going to put it off until after the first of the year. She went online tonight and found where this might be causing him to have real bad lower abdomen pain. They had said it was irritable bowl syndrome, but she thinks this maybe the problem now. She's going to call tomorrow and reschedule the surgery. Hugs, Billie

  • I am home and feeling wonderful .... no pity story ... I am really impressed .... all my sufferng was before surgery ... I had a tear larger than MRI said ... and lots more inside the knee ... the doctor cleaned up ... I used my walker a few times but I really don't need it ... If I go for a walk in the yard ... I'll use it in case I need support but I am very proud of the way the surgery went. I have 2 little holes in my knee. My last surgery on the knee in 1997 was horrible ... I suffered so much when I came home but so far .... I feel great ... even slept without pain and not used my pain meds as of yet ...

    I thought I was in heaven yesterday ... not much pain ... and then about an hour ago ... I noticed some pain .... and it got worse ... Doctor's office called to check on me ... guess they use a 24 hour nerve block during surgery and it wore off ... Pami isn't great as I thought ..... how I bragged how great I felt!! Yeah right ... so now I took my Percocet/pain meds and have my knee iced ... will watch TV ... now's the time you miss a mom waiting on you!! I thought I'd skip through this pain free!! Pami .   • I thought with all that bad stuff going on in the world today you might like to hear something a little on the lighter side. Here's a little story about my unpacking and decorating in my new apartment. Bigsis Pat

Treasure Jar

In a jar of birdseed place a penny, wooden spool, rubber band, tack, safety pin, flower (eraser), marble, smiley face, heart, star, button and paper clip. Paint lid your choice of colors and using an opaque white or permanent black marker write, Too Blessed To Be Stressed or 2 Blessed 2 B Stressed, on the painted lid*. Make a tag with the following poem on it, tie it on with ribbon or raffia. ..And you have a cute gift.
